Southwest Stuffed Peppers
One of the things I love about this recipe is that it doesn't just have to be stuffed like a traditional stuffed pepper. The filling for these stuffed peppers can be used in so many different ways.

Cook Time 1 hour hr
- 1 lb uncooked ground turkey
- 2 cups frozen corn
- 2 cups cooked brown rice
- 2 cups fresh salsa
- 3 tbsp homemade taco seasoning
- 10 yellow, orange, or red bell peppers
- 2 cups Mexican cheese (Optional)
Preheat the oven to 350°
Mix ground turkey, brown rice, frozen corn, fresh salsa and taco seasoning together.
Chop tops off of the peppers
Fill peppers to the top and place tops of peppers back on
Line the peppers up in a baking dish
Bake for 25 minutes
Pull out from oven, remove tops, top with cheese (optional) and place back in the oven without the tops on.
Bake for 25 more minutes
