Southwest Stuffed Peppers

One of the things I love about this recipe is that it doesn't just have to be stuffed like a traditional stuffed pepper. The filling for these stuffed peppers can be used in so many different ways.
Prep Time 15 minutes
Cook Time 1 hour
Servings 10 peppers

Ingredients
  

  • 1 lb uncooked ground turkey
  • 2 cups frozen corn
  • 2 cups cooked brown rice
  • 2 cups fresh salsa
  • 3 tbsp homemade taco seasoning
  • 10 yellow, orange, or red bell peppers
  • 2 cups Mexican cheese (Optional)

Instructions
 

  • Preheat the oven to 350°
  • Mix ground turkey, brown rice, frozen corn, fresh salsa and taco seasoning together.
  • Chop tops off of the peppers
  • Fill peppers to the top and place tops of peppers back on
  • Line the peppers up in a baking dish
  • Bake for 25 minutes
  • Pull out from oven, remove tops, top with cheese (optional) and place back in the oven without the tops on.
  • Bake for 25 more minutes
  • Enjoy!
