Sometimes, you need a quick and easy dinner to throw together that cooks while you help with homework, clean the kitchen, or tackle other aspects of life. This easy gluten-free meatloaf is your answer for a quick win and filling dinner.

Here’s the thing about meatloaf. Not only is it filling but you can pair it with just about any vegetable to make a well rounded meal. Sure, as kids we avoided it with a passion but it’s actually a very underrated, easy gluten-free meal to make.

Dairy-Free & Gluten-Free Meatloaf

The only ingredients in the meatloaf you need to be careful of are the bread crumbs and the ketchup. While it’s not common for ketchup to contain gluten, it is possible, depending on the brand. On the other hand, bread crumbs are an ingredient that you need to be careful of. The Schar Gluten Free Bread Crumbs are a staple in our pantry. We use them to cook all the time, and they are not seasoned, so they work for more than just one or two dishes.

In order to keep the meatloaf dairy-free, I also used unsweetened almond milk. However, if dairy-free is not a concern for you, regular whole milk works just as well. You will not need to modify the amount.

10-Minute Gluten-Free Meatloaf

Meatloaf is an underrated, easy gluten-free recipe. It can be paired with any vegetable and be made in 10 minutes or less for a quick dinner on a busy night.
Prep Time 10 minutes
Cook Time 1 hour
Servings 4 people

Ingredients
  

  • 1 lb Lean Ground Beef
  • 1 Egg
  • 1/3 cup Onion Diced
  • 1 cup Unsweetend Almond Milk
  • 1 cup Gluten-Free Breadcrumbs
  • 1/2 cup Ketchup
  • 2 tbsp Brown Sugar

Instructions
 

  • Pre-heat the oven to 350°.

Meatloaf

  • Combine the ground beef, egg, onion, milk, and breadcrumbs in a bowl. Mix together until mixture is smooth.
  • Transfer into a loaf pan.

Sauce

  • Mix ketchup and brown sugar. Once smoothed out, pour over the meatloaf.

Cooking

  • Cook uncovered at 350° for 1 hour and 10 minutes or until no longer pink in the middle. Inside temp should be at least 155°.
  • Let cool and enjoy!
